Founded in 1896 on Rue du Faubourg-Montmartre, Bouillon Chartier is the last survivor of the great Parisian "bouillons", popular restaurants that served cheap meat broth to workers. The 300-seat dining room, a listed historical monument, has kept its Belle Époque decor: glass roof, mouldings, numbered coat racks.
You can eat œufs mayo, beef bourguignon or andouillette for a few euros, served by waiters in black waistcoats who write the bill on the paper tablecloth. The ever-present queue is part of the show.
